{easy weekday meal with three ingredients}

Hi all – happy Friday :)

I know sometimes the week can take the wind out of your sails and coming up with quick, easy, healthy meals becomes pretty hard. This is so simple anyone can do it. Ready?

In one pan (who likes to do dishes?) lightly drizzle with olive oil then: toast a piece of bread, crack an egg, and sauté asparagus (or any vegetable you have laying around – spinach, peppers, mushrooms, etc). 

stack the egg and asparagus on the toast…I topped mine with a pinch of salt, pepper and fresh parmesan.
